We use regional resources in the process of creating our dishes.
We source and select the products we want to work with.
We use both, traditional and modern techniques. We combine them with heart and experience. We do not fall under the pressure of regional fashion but strive for uniqueness.
Based on these qualities we seek to create our “terroir” – a sense of place.
Our project is to display food as a source of constant fascination. It is a story about us, the place, the philosophy of cooking, self-improvement and the search for fulfilment. This is our definition of a good cuisine.
